Vegan Apple Pie



6 tbsp apple puree
1 2/3 cup or 200 gram oat flour
3/4 cup or 100 gram almond flour
3 tbsp linseeds
4 tbsp coconut oil
Pinch of salt
1 cup or 100 gram coconut blossom sugar

200 lb or 900 gram apples
2 tsp cinnamon powder
Handful hazelnuts
3 tbsp pumpkin seeds
4 tbsp raisins
1 tsp oat flour
1 tsp coconut blossom sugar

1. Preheat oven to 400 degrees.
2. Prepare filling by peeling and slicing apples into little  pieces and tossing with cinnamon,hazelnuts, pumpkin seeds, raisins, 1 tsp coconut blossom sugar, 1 tsp oat flour and set aside.
3. For the crust, whisk all the crust ingredients in a large bowl and mixed until a dough forms. If the dough is to sticky add a little bit more oat flour. 
4. Press the mixture in to a cake pan (grease the cake pan with coconut oil) and add the apple filling.  5. Bake for 45-50 minutes or until golden brown. Cover the edges with foil at the 30-minute mark so they don’t get too brown.
6. Let cool completely before slicing and serve with coconut whipped cream and fresh fruit or just with a scoop op vegan vanilla ice-cream & enjoy!

Vanilla Cake



3 tbsp melted coconut oil
1 cup or 200 gr coconut blossom sugar
1 2/3 cup or 210 gr oat flour
1 cup or 235 ml oat Milk ( I use provamel)
Pinch of Himalaya salt
1 tbsp tartaric acid
1 tsp apple cider vinegar
1 tbsp vanilla powder
1 vanilla bean (scrape the seeds)
4 tbsp cacoa nibs


How to
1. Preheat the oven to 180 degrees Celsius.
2. In a mixing bowl, mix together the coconut oil, himalaya salt, coconut blossom sugar, tartaric acid, apple cider vinegar and oat milk until evenly mixed. Sift the oat flour and add to the wet ingredients.
3. Grease and line a loaf tin and pour in the mixture into the tin. Bake for 45-60 minutes or until a toothpick comes out clean.
4. Remove from the oven and allow to cool on a cooling tray for 20 minutes before turning out the cake and allowing it to cool completely.
5. Once the cake is completely cooled you can use a frosting, icing or just serve it with fresh fruit & enjoy!
