Serves 4-6 Ingredients 1/2 package Tabouleh, washed & drained 1 Zucchine, washed & sliced 1 Sweet red pepper, Washed & sliced 1/2 or 90 grams Kalamata olives 1 Red onion, chopped in little squares 1 Large tomato, washed & chopped in little squares 1/2 Cup or 90 grams chickpeas, washed and drained 2 Handful rucola, washed and drained 2 Garlic, minced Pinch of Himalaya salt Pinch of black pepper Pinch of garlic powder 1 Tbsp Hennep oil 1/2 Juice of a Lemon How to 1. Prepare the tabouleh according packing instructions. 2. Meanwhile roast the chickpeas in the oven for 25 minutes, season it with, garlic powder Himalaya salt and black pepper. 3. Grill the Zucchini and sweet red pepper together with the garlic in a non-stick pan or in fry pan with a little bit coconut oil. 4. When the tabouleh is ready let it cool down for a couple of minutes and add it in a large bowl. 5. Add the grilled veggies, roasted chickpeas, rucola, olives, the chopped onions and tomatoes and season it with Himalaya salt and black pepper to your taste. 6. Add at last the lemon juice and the tbsp hennep oil. Bon appétit!
